KC868-COLB is 16 channel 0-5v analog input ports, you can convert to 4-20mA, so that can integrate to home assistant by MQTT.

Previously, I was told that it’s possible to convert a 4–20 mA signal for use with the COLB. Could you please explain how to do that? Also, is MQTT integration with Home Assistant possible over Wi-Fi, or is it only supported via Ethernet?

yes, COLB direct use by 0-5v, if you want use by 4-20mA, you can add extend convert module, there are many 0-5v to 4-20mA small module on market, you can search it.
MQTT only use by ethernet. wifi is not stable.

Can I still read the current correctly if I connect a 250-ohm resistor across the + and − terminals?

if you read by current, can't read by voltage.
