I would like to connect a Nextion HMI to a KC868 AIO All in One Controller. 
Please advise on best pins to use.

if you not use 4G module, you can use 4G socket's RXD,TXD pin for Nextion display.

INPUT use by PCF8574 i2c extender chip, it MAX frequency is 100KHz. also you can check with ESP32 datasheet, support INPUT frequency.
