you can use dc 0-5v output analog signal sensor.

Thanks, for DI GPIO36/39, can these be used as counter to meassure flow 27 pulses per liter. How fastis this input?

DI GPIO36/39 speed , you need confirm with ESP32 datasheet, you can try to test it. if only 27Hz, i think it will be ok.
